Ajiaco:
It is typical of the capital, it is a soup made of various solid ingredients chopped into pieces such as chicken, potatoes (in various types), sweet corn, usually accompanied by avocado, and is commonly served with cream milk and pickled capers. It is a creamy and delicious preparation.
